2 oz Van Hoo Vodka
¾ oz Lemon juice
2 oz Simple syrup
1 ½ oz Champagne
3 Raspberries
1 Egg white


Crush raspberries in a shaker
Add vodka, syrup, lemon juice and egg white
First shake without ice, then again with ice
Pour into champagne coupe or martini glass
and top up with champagne
Garnish with lemon twist
